I am often asked what the difference is between probiotic drinks and foods, and probiotic capsules and powders. There are many differences and they include the following:

1. Probiotic drinks and foods are live and the bacteria is active. This means when it gets to your intestines it goes right to work. Pill and powder probiotics supplements take up to 6 hours to colonize in your intestines .

2. Lactofermentation, such as the process used by Drink La Vie, creates lactic acid as a by-product of fermentation which means the bacterial culture is already living in an acidic environment. When it gets to the acidic environment of your stomach, it can pass through unscathed. Most probiotic supplements cannot survive the stomach acids.

3. With lactofermentation, the fermented foods retain their vitamins, minerals, enzymes and amino acids . In fact, the bacteria makes the nutrients more available to your body so you get even more out of the fermented foods than if you simply ate them.

4. Bacteria need prebiotics to thrive. Prebiotics are plant fiber and are not included in probiotic capsules but are found in probiotic foods and drinks. Research has shown that to increase the levels of bacteria in your gut you need to have prebiotics as well as probiotics.

Theres a lot of buzz around probiotics. Theyre endorsed by celebrities and fill grocery stores aisles.

Probiotics are beneficial bacteria that promote a healthy gut. Scientists believe they could unlock a deeper understanding of our health. Probiotics are found in some foods and drinks, like yogurt or fermented tea.

Just like vitamins, probiotics are available as supplements. Manufacturers make steep claims about their benefits. They include digestive health, strengthened immune system, weight loss and reduced cancer risk. But can a supplement really do all that?

To learn more about probiotic supplements, we spoke with Carrie Daniel- MacDougall, Ph.D., M.P.H., a nutritional epidemiologist at MD Anderson who studies diet and the microbiome.

Heres what you should know about probiotic supplements.

Its always better to get nutrients from food. That includes probiotics.

More research needs to be done on probiotics in general and probiotic supplements, but its always better to get your nutrients from food rather than supplements, Daniel-MacDougall says. They just dont deliver the same benefits as food.

One reason is because supplements arent regulated as closely as medications. So the quality and ingredients can vary greatly from product to product.

Unless your doctor is prescribing probiotics for a specific purpose, stick to getting them from foods like yogurt that may have other nutrients, like calcium.

Delivery Of Viable Functional Probiotic Bacteria

With commercial food products, cheeses have been commonly used as carriers for probiotic delivery. Ong et al. showed the ability of three batches of cheddar cheese to deliver a variety of probiotic bacteria. Results showed that the Cheddar cheeses can be an effective vehicle for delivery of the Lactobacillus and Bifidobacterium strains tested. Fresh cheese was also found to be a suitable vehicle for the oral administration of B. bifidum, Streptococcus thermophilus, Lactococcus lactis, L. acidophilus, and Lactobacillus paracasei . A study conducted on the ability of cheese to deliver L. acidophilus and L. paracasei was done by influencing the stage during the cheese making process at which the probiotic was added. All tests conducted showed an increase of intestinal flora after ingestion of the probiotic cheese . Similar studies were conducted by Phillips et al. to deliver probiotics through cheddar cheese with results showing significant increases in all species tested except for L. acidophilus Bergamini et al. and Ong and Shah also showed the ability of Argentinean and cheddar cheese respectively to deliver probiotic bacteria to the human GIT.

Due to the relatively short shelf-life of most liquid probiotics, some wonder if they can be frozen, and then defrosted as required. The answer to this question will likely differ from product to product. In general, though, it is not a good idea to freeze liquid probiotics, as it could damage the probiotic bacteria.

Enhanced Coatings For Stability And Physiological Protection Of Probiotics

Delivery systems used for the delivery of probiotics include the use of coated beads, capsules and tablets. A study conducted by Krasaekoopt et al. showed the effectiveness of alginate beads in the delivery of both Lactobacillus and Bifidobacterium bacteria. The formulated beads were composed of sodium alginate and chitosan which were both coated and uncoated. Results showed that after exposure to simulated human gastric and intestinal fluid with or without bile salt, the chitosan coated beads showed the highest survival rate of Lactobacillus bacteria and that the Bifidobacterium bacteria did not survive exposure to the gastric media, even when coated. Iannitti and Palmieri also stated that Lactobacillus bacteria do possess gastric-protective properties compared to other species of bacteria which would result in the survival of Lactobacillus bacteria and not the Bifidobacterium bacteria. Kaushal and Shao stated that Lactobacillus sp have the ability to survive exposure to gastric acid. A similar study was conducted by Brachkova et al. , which showed the possibility of delivering different probiotic bacteria species through alginate beads. This study also showed that alginate beads can be used to deliver probiotics effectively to the human intestine while providing protection for the bacteria against the harsh gastric environment.
