How To Make This Dairy

For this coconut yogurt, you only need three ingredients coconut milk, corn starch and a yogurt starter. Youll also need a food thermometer.

Ive tried this recipe multiple times with various probiotics and methods. Although it can, and has, worked for many people, Ive found that the best and most consistent results come from using a powder yogurt starter or a store-bought yogurt instead of the probiotics.

Use 1 teaspoon powder yogurt starter. Make sure to set aside 1 tablespoon coconut milk to mix the yogurt starter into.

Use 2 tablespoon store-bought yogurt.

Heat up the coconut milk and cornstarch together over medium heat, till the mixture reaches 82ºC, stirring occasionally. If youre wondering why the cornstarch Ive found this is 100% needed to give you the delicious thick texture you want. I did lots of research and noticed that almost all store-bought versions have their own thickeners in. Im guessing this is because plant-based yogurts are thinner, in general, and so need a thickening boost. Just make sure to stir well so there are no lumps from the cornstarch.

Leave the milk to cool down till between 42-44ºC. Then add in the 1tbsp yogurt starter/ coconut milk combination into the heated coconut milk and mix well.

If using powder yogurt started, first mix it with 1 tablespoon cool coconut milk, then add it to the warm milk.

If using store-bought yogurt, just add it to the warm milk and stir well.

However, as you’ll have read in my last post, my love of coconut has a long history – way before it was fashionable. With my studies in Nutritional Medicine this was accentuated ten fold as I discovered the amazing health benefits coconut posesses.

Dairy on the other hand, has been a love of a different kind. No matter how hard I tried, I just couldn’t live without yoghurt. However Dairy just doesn’t love me back, yoghurt may be a source of probiotics but for me it was not a viable option.

Imagine my absolute euphoria when I discovered Coconut yoghurt? A dairy free, lactose free, vegan friendly yoghurt with the healing benefits of coconut milk – could it be true? Could it be possible?

My first experience with coconut yoghurt was the highly popular Co-Yo. I have to say I was a little disappointed, while it was thick and creamy, it lacked the sourness and the light and fluffy texture. Quite honestly it simply tasted like a thick and heavy coconut cream – which is fine but not quite what I was looking for as a yoghurt substitute.

First of all, I LOVE coconut yogurt. Out of all the plant-based yogurts I tried, coconut yogurt is the one I like the best. But, for me, finding coconut yogurt is a major task. I have to go out of my way for it, visit specific stores that may or may not stock it.

Yogurt is also healthy, with probiotics cultures, but store-bought often contains additives or sugar, or it just doesnt taste how I would like it. So I mostly wasnt even eating yogurt .

When you make your own, you can be sure of the ingredients you use, and only use a sweetener if you want to.

Plus, homemade coconut yogurt is simply DELICIOUS!

To make your own coconut yogurt youll need strong probiotics and coconut milk. I checked the brand I use and it contains guar gum as a thickener, so you may need to adjust for it.
