The question you may ask yourself is, if Im using pasteurized milk already do I need to heat it to 180 degrees or can I just skip that step?

Heres what Ive learned: Heating it to 180 degrees isnt for the purpose of killing unwanted bacteria as much as it is for creating a thick texture.
